Our founder, Emad Tawfik, is a Certified Olive Oil Sommelier. He tastes and evaluates every harvest of our extra virgin olive oil for quality, character and health profile before it reaches our kitchen.

We use only cold-extracted extra virgin olive oil that is high in polyphenols. Polyphenols are natural antioxidants found in fresh, high-quality olive oil, and they give it a fresh, fruity flavor with a peppery finish. Our oil also has very low free acidity, a sign that the olives were healthy, picked at the right time and pressed quickly after harvest.

We finish every pizza with it, including our White Pizza. We also use it on dishes like the Caprese Flatbread and the Caprese & Prosciutto sandwich.

We take the dishes people already love and make them with restaurant-quality ingredients and technique. Our dough is made in house every day, our pizzas use a five-cheese blend, and every pizza is finished with cold-extracted, high-polyphenol extra virgin olive oil.

You'll see it across the menu. Our Rigatoni alla Vodka is made with mezzi rigatoni in a classic pink vodka cream sauce. The Tuscan Riviera tosses penne in a garlic-pesto cream with heirloom and sun-dried tomatoes. The Mushroom Burrata Penne pairs wild mushrooms and truffle cream with fresh burrata. Our Tuscan Meatballs are hand-crafted and served over whipped ricotta with basil pesto.

The same care goes into the rest of the menu. Our wings marinate for 24 hours, and our boneless wings are hand-rolled from scratch. Our cheesesteaks are made with shaved ribeye, and our burgers with hand-pressed USDA Angus beef on brioche. We use local Kennett Square mushrooms, heirloom tomatoes, burrata and Prosciutto di Parma. We also offer gluten-free crust, pasta, brioche and tortillas, plus gluten-free bowls.
